Mima's Mimosa's

Mimosas...Mima's favorite way to start the New Year!

First things first, pull out a beautiful small glass pitcher.  If more than 4 adults plan to partake of your wonderful Mimosas...double the recipe below.  Note:  Regardless of how many glasses want filling, I like to use 1/2 a bottle of champagne to keep the drinks cool and the bubbly...well, bubbly.

Now, let's begin.

You'll need the following to serve 4:

1/2 Bottle of Champagne (the best of the bubbly is not necessary for this recipe)
2 C. Orange Juice (the best OJ is better but not required)
2 oz of Chambourd or Kirsh liquor
Pomegranate Airls (another word for the seed)
Squeeze of lime (or a simple splash of bottled lime juice works, too)

Add all ingredients and stir.

Note:  You can purchase the pomegranate airls in the produce section of your grocery store.  If you can't find them or don't like them or forget them - don't worry.  I'd add a bit more Chambourd.  I imagine maraschino cherries might work...in a pinch.  I'd stick with the Chambourd.

I like to balance my Mimosa with a bit of coffee cake or perhaps a cinnamon roll and a spoonful of softly scrambled egg.

Anyone for seconds???

Have a wonderful 2012!
